The only thing he has ever directly told me about the proper preparation of his product is that it shouldn't be overcooked. His exact phrasing is, "It should have a little 'bend' in it." Now that you've brought this up, though, I'll make a point of asking him next chance I get. He refers to himself as ...Allan is a very nice man. He refers to himself as an "old hillbilly" but he's not fooling anybody. He's a sharp and astute businessman and an artisan of the highest degree. He's one of the lucky ones who gets to make a living doing what he loves and loving what he does, and it shows in every ounce of every product.

I saw a comment on another site somewhere from some doofus who said the "artificial chemical smell" of Benton's bacon was so strong his wife wouldn't let him cook it in the house. Hello?! You've never smelled real wood SMOKE before, have you? Idiota! I got a T-shirt from Allan once. The smoky smell that permeated the fabric was so divine I hated to wash the shirt once I'd worn it. And every time I stop by Allan's place, I can enjoy that wonderful wood smoke aroma in my car for the next hundred miles or so just from having spent a few minutes in the shop. "Artificial chemical smell." Uffa! Our trip was a little over 550 mi each way, so we picked up a little more than a pound. We had BLT's on Sunday, at the suggestion of Mr. Benton, and I must say they were the best I ever had.Anonymousnoreply@blogger.com
